做法
1. | 準備 咖啡糖蜜醬。在步驟2濃縮醬汁前先取出1杯做為醃料。剩餘的繼續煮到剩下一半做為醬汁。 |
2. | 豬排与1杯未濃縮的咖啡蜜糖醬放進塑膠袋裡仔細拌勻。放進冰箱醃至少2個小時但不要超過6個小時。 |
3. | 烤盤燒熱後刷點油後放上豬排用中大火炙3分鐘。翻面繼續炙到豬排內部溫度達到130°F(55˚C),大約再4分鐘。將豬排盛到盤裡用錫箔紙蓋住,等10分鐘讓肉汁回收。 |
4. | 食用時佐以蔬菜, 奶油焗馬鈴薯和濃縮的咖啡蜜糖醬。 |
PROCEDURE
1. | Prepare the Coffee Molasses Sauce . On step 2, take out 1 cup of the sauce before reducing it. Continue cooking the remaining sauce until it reduces by half. |
2. | Place the pork chops and 1 cup of unreduced Coffee Molasses Sauce in a food plastic bag and marinate for at least 2 hours but not longer than 6 hours. |
3. | Brush little oil on a heated grill. Place the pork chops on the grill and cook over medium-high heat for 3 minutes. Turn the pork chops over and grill until the inner temperature reaches 130°F(55˚C), approx. another 4 minutes. Transfer the pork chops to a plate and cover with a piece of foil. Let it sit for 10 minutes. |
4. | Serve the pork chops with vegetables, potato gratin and Coffee Molasses Sauce. |
